Day 4 & 5

Day 4 (2/8/10) ~ eating on the run no longer exists for me. Monday I had to work all day and had a Crossroads meeting at night. No time for a sit down dinner. In my old life, I would grab some crackers and cheese or yogurt. Not anymore. Carrots, lots of carrots is what I find myself eating. I hope I don't turn orange.

Day 5 (2/9/10) ~ Woke up to lots of snow and a needed to get to work on time . . . that eliminated the time to make eggs. That has become my breakfast staple. Rice Chex and Crispx are ok, but not the same as Frosted Mini Wheat's. :) On the way home from work I stopped at Harvest Health Foods to buy tahini. I am going to try and make my own hummus. Tahini is a necessary ingredient. That is one of my goals for Wednesday . . . homemade hummus and black bean soup. I'll let you know how it goes.

    Anyway, I just wanted to tell you that you can make eggs super quick in the microwave. We use a little cooking spray inside a glass custard cup and pop the egg in there. Microwave for ~1 min (I think - might have to trial and error a bit) and there you have your breakfast! Good luck!

    I'm sorry to hear about your allergies. That has to be hard to cut out so many foods. I have another friend who has gone through something similar and it takes a lot of work to find food you can eat. I pray God will give you grace to get through. Is this just a trial right now or are these foods out for good? Just to add to the comment above....we cook eggs in the microwave, too. We put it in an oversized (or regular is fine) mug and cook it for about 45 sec. I scramble mine before hand and Ricky leaves his as is. Hope you find lots of new foods you like! :)
