Day 1 & 2

Thursday (2/4/10) was a life changing day for me. As some of you know, I haven't felt good in a long time . . . headaches, fatigue, stomach issues . . . etc. A few people had recommended to me to get tested for food sensitivities. After much debating, we decided to bite the bullet and get it done. I truly didn't believe I had any issues and it was just a waste of money. So on January 7, I headed to the Born Clinic for an evaluation and blood test. After a month of waiting, I got the results and much to my chagrin I have some food "issues". I have to refrain from eating the following items: gluten, wheat, barley, rye, oats, all dairy products, yeast (brewers & bakers), tomatoes, garlic, coconut and turkey. A little overwhelming to say the least. There goes my carbs :(. So as a coping mechanism, I have decided to blog about it. Hoping that will keep me sane.

Day 1 (2/5/10) ~ Yesterday wasn't too bad. I spent 10 minutes looking at my pantry in the morning with no luck. Good thing Mark bought 5 bags of apples when they were on sale. And I love apples. That was breakfast. I spend lunch at Meijer, trying to figure out what I could eat. Peanut Butter will become a staple of my diet, of this I am sure. Dinner found me digging in the pantry again. The one soup I found I could eat was pea soup. Again, good thing I like it.

Day 2 (2/6/10) ~ Started out great. My mother-in-law is amazing. She found corn tortillas for me. It may not be bread, but it sure is close. And sorbet. Since I can't have dairy, ice cream is out. Downfall of the day was the mini breakdown at Meijer. . . or I'll clarify int he Meijer parking lot in the car. After spending time at Meijer and trying to research what I could eat, I just broke down. There are so many things I eat on a weekly basis that I can't have. It's very overwhelming.
